STARTING FROM COCOA BEANS, COCOA POWDER PRODUCTION PASSES THROUGH A NUMBER OF PHASES NOW MANAGED BY AUTOMATED TECHNOSILOS PLANTS TO IMPROVE EFFICIENCY, PRODUCTION CONSISTENCY AND HYGIENE.

Technosilos technology semalessly links each step in the production process, removing intermediate products from processing machines, storing them and transferring them to the next stage.

Collection, fermentation and drying

Once harvestes, fermentated and dried, the beans pass through rigorous quality control before being stored. The raw cocoa is thoroughly cleaned by sieves and mechanical brushes. Vacuum cleaners remove wood and sand residues and even the finest powder, while special magnets take care of any metal particles.

Crushing and decortication

A cocoa breaker reduces the beans to medium-sized pieces, giving rise to the cocoa grain, before a system of sieves and vacuum cleaners separates the outer skins.

Transport and storage

The outer skins and beans are then taken from the cocoa breaker and transferred to intermediate storage via pneumatic transport.

The abrasive shells are transported through special pipes and bagged in big bags before being sent to other secondary treatment processes.

Dedusting

Dust collectors remove dust from the cocoa beans, which are then stored in buffers that feed the toasters which release their full aroma. Once cooled, the roasted grain is sent to storage.

GRINDING AND COOLING

The mix of cocoa grains first undergoes a coarse grinding and then a finer one. Heat generated by pressure and friction melts the cocoa butter contained in the seeds, obtaining the "cocoa liqueur" (or paste, or mass) - a thick, brown liquid that coagulates with cooling.

CAKE TRANSPORT

The cocoa butter is extracted by large hydraulic presses. The residual product - or "cake" - is crumbled and placed in a Technosilos circuit heated to around 80°C. The pneumatic transport is equipped with a series of technical devices that allow it to function perfectly and avoid any clogging of the lines.

COCOA POWDER TRANSPORT, STORAGE AND PACKAGING

After cooling and fine grinding, the fine cocoa powder is finally ready. It is entrusted to a suction conveyor equipped with efficient Technosilos dedusting filters, which feed the packaging machine.
